Chef Nat Borsi’s culinary journey began in his early teens in France, where he found inspiration at Les Olivades, a historic restaurant on the famed Route of Napoleon. Under the mentorship of Chef Cederic Manzoni, who recognized his talent and passion, Nat developed a love for French cuisine and refined techniques that would shape his career. Nat’s hands-on experience at Les Olivades taught him the foundations of classic cooking, setting him on a path that blended the rustic influences of his Italian heritage with the elegance of French culinary tradition.

Seeking broader horizons, Nat worked seasons in Sanary-sur-Mer and eventually relocated to Bangkok, where he spent three years immersing himself in Southeast Asian culture and cuisine. His professional journey continued when he moved to Seattle, where he joined Tom Douglas’s celebrated restaurant group under a rare J1 visa. There, he rotated through roles at Mediterranean-inspired Lola, pan-Asian fusion spot Tanakasan, and the iconic Palace Kitchen, gaining experience across varied culinary styles while working with a team known for its dedication to quality and creativity.

Throughout his career, Nat has been accompanied by his wife, Grace, whose shared passion for hospitality has been integral to their vision. Together, they spent years saving and dreaming of opening their own restaurant, driven by their love for the energy of a beautifully run establishment. Their journey eventually led them to Ashland, Oregon, where they chose to create a welcoming space for diners to celebrate, unwind, and enjoy thoughtfully crafted, regionally inspired dishes—a realization of their dedication to creating joyful dining experiences.
